pâte brisée
baked blind for 10 minutes; see this
150g flour
75g butter
3g salt
filling
2 asparagus, chopped
1/4 red paprika, chopped
2 mushrooms, chopped
2 sausages, chopped
30g mozzarella cheese
bechamel sauce see this
10g butter
10g flour
100ml milk
100ml water
30ml cream
30g ricotta cheese
50g cream cheese
baked blind for 10 minutes; see this
150g flour

bechamel sauce see this

100ml milk
100ml water
30ml cream
30g ricotta cheese
50g cream cheese


1. Prepare the pâte brisée dough and bake blind for 10 minutes.
2. Make bechamel sauce ,and add the ricotta cheese and the cream.
3. Heat the oil in a pan and cook the vegetables and sausages.
4. Put the fillings into the pie shell and pour the bechamel sauce.
Top with the mozzarella cheese.
5. Bake until browned.

Roast Chicken with herbed cheese

190 x 40 min
3 whole chicken legs
1 onion, cut into chunks
100ml wine (white)
1 tbsp olive oil
50g cream cheese
thyme
1/2 lemon
1 onion, cut into chunks
100ml wine (white)
1 tbsp olive oil
50g cream cheese
thyme
1/2 lemon


1. Put the thyme, onion, wine and lemon juice in a bowl with salt
and pepper.
Mix well and add the chicken, toss
well,then cover and refrigerate for 1 hour.
2. Blend the cream cheese and thyme.Spread the cheese between the skin and the flesh.
Rub the chicken with the olive oil.
3. Place the onion on the tray andput the chicken on top, skin-side-up.
Drizzle with the lemon juice and
sprinkle with thyme.
Roast for 40 minutes until browned
and cooked through.

Tofu Hamburgers with pitta
for burgers (mini)
150g lean ground beef
120g tofu
1/4 onion, chopped
1 egg (50g)
25g milk
60g bread, chopped
1/8 paprika, chopped
mozzarella cheese, sliced and cut into 2cm x 3cm
1/5 tsp mustard
for pitta

150g lean ground beef
120g tofu
1/4 onion, chopped
1 egg (50g)
25g milk
60g bread, chopped
1/8 paprika, chopped
mozzarella cheese, sliced and cut into 2cm x 3cm
1/5 tsp mustard
for pitta

1. Heat oil in a skillet over medium heat and sauté the chopped
onion until cooked through; Set aside
2. In a bowl. mix the lean ground beef and salt and pepper until well
combined.(optional)
In a small bowl, whisk the egg. Add tofu, chopped bread, milk,
cooked onion and salt and pepper.
3. Shape into oval 8 patties. press down to form a dent in the center.
4. Heat oil in a skillet over low heat.
Cook on each side and pour 100 ml water (or more), covered until
cooked through.

4.Place the chopped paprika over the hamburgers and cover with
the cut cheese.
5.Bake in 190C oven until the cheese is melted.
6. Dab each pitta with the mustard. Stuff each with burgers.
Bechamel Sauce

1. In a sauce pan, melt the butter completely and add flour.
2. Mix well using a whisk or a wooden spoon, make a white roux.
3. Keep stirring and make it smooth.

4. Pour 1/2 milk stirring gently over a medium heat.
5. As soon as the milk boils up, mix constantly to prevent lumping.
Scrape the side of a pan by a rubber spatula.



6. Pour the rest of the milk, mixing until thick and creamy.
7. Add salt and nutmeg.
